I think rice bowls are a great base for thrifty changes. It can be a burrito bowl with beans (or without!) and any leftover/canned/frozen veg with a meat protein of choice if you want. It could also be more Asian cusine inspired with a sauce.
Rice bowls are a great idea! Rice is wonderfully versatile. We are big fans of Asian cuisine and the sauces are fairly easy to make from scratch.
I chatted with a lady at Walmart and she gave me her tip of making inexpensive ramen and she adds frozen veggies and a bit of meat for a much more healthy and filling meal. There are many ways to change that up too like adding boiled eggs!
