My mum and I made formula for my sister from evaporated milk in the 1960s. I don't know what the current thinking would be on how healthy that was, but she grew up fine.

I'm sure that thinking was carried over from WWII. It makes sense as a ready made and shelf stable milk option for babies, though we understand more now of the extra nutrition that babies need for growth. My mom made my 2 older siblings a homemade formula because they didn't do well with powdered. It had stuff like raw eggs in it and they loved it. I'll need to ask my mom if her formula used evaporated milk! ☺️

We use evaporated milk every day in our coffee. We stopped buying half and half a long time ago, it was too expensive and spoiled too quickly. We buy a flat of about 24 cans at Costco.

That's a great idea! I use the same concept with mushrooms. Half the time I don't use them fast enough and they go bad, so I started buying a flat of the cans at Aldi. Now I have mushrooms whenever I need it without worrying if they'll go bad. ☺️ I need to do the same thing with evaporated milk!

This is a treasure trove! I always keep evaporated milk in the pantry, but never thought to use it as a heavy cream substitute or in bread. Well, I know the next recipes to try.

As a child, we knew dad's paycheck for the month was used up when mom switched to powdered milk. It was not a favorite. But now I can appreciate the thrift and how it still provided nutrition to growing kids.

They had such clever ideas back then! Yes, powdered milk was for when we ran out of fresh too. One of my favorite cookie recipes my mom made uses a whole cup of dry powdered milk!
