
It’s officially summer, which means for many that it’s high grilling season! I thought it would be fun to take a look at what is a unique and tasty meat-stretching recipe from wartime: Potatoburgers.
I’ve come across the recipe a few times, but the recipe I’m sharing with you comes from Helps for Homemakers: War Emergency Recipes.
Beef and potatoes are a long-standing staple in the American diet, so potatoburgers shouldn’t be too odd a concept for most Americans. These special burgers use grated potatoes to stretch the ground beef.
I actually love this recipe a lot. It’s filling and delicious, and it’s a fun variation on a classic dish.

Oo! We usually do regular ol' burgers or beet burgers (so tasty!) in the summer, but this sounds like a gem, and we just harvested some potatoes.
