This month’s recipe comes from a great cookbook focused on recipes that save sugar: 300 Sugar Saving Recipes by Harriet H. Hester. I love cookbooks like these, because it really showcases the creativity of the times. And it’s a bonus that we can use these recipes today if we’re looking to reduce the sugar in our diets.
Rarebit is usually a pretty straightforward, basic cheesy dish. It utilizes leftover bread crumbs too! I love that this recipe takes a different spin on it by adding green peppers, onions, and tomatoes for a more “Mexican” flair. If you want to tweak it for modern tastes, I think the addition of garlic and a bit of chili powder or smoked paprika would be great!
Rarebit makes a great light supper accompanied with a salad or as a snack. Instead of American cheese, I think a regular cheddar would be a fine substitute.
I know about rarebit, but I've never had it. What a cool recipe!
