In honor of Spooky Month, I turned to some vintage menus from my cookbooks for some ideas of what to make. I found this cute little Halloween party menu and locked eyes with the “Devilled Eggs.” I love me a good deviled egg, so I was totally down for this.

Here’s the menu. It’s from The Modern Family Cook Book, 1943.

I wasn’t satisfied in making just one recipe, so I made all three that they suggest. They were unique and at least 2 were edible and dare I say tasty. Ha!

We have about 20 laying hens, so getting eggs wasn’t the problem. It was boiling good looking eggs. I guess the ones I picked were on the older side and had massive airholes. You can still eat them of course, but they make dang ugly deviled eggs. Oh well. Let’s just say they were in costume! (They do kind of look like little ghosts. See below.)

There were a lot of duds, too: egg yolks super close to the edge of the white, so cutting them in half would have destroyed them. These all went into egg salad. After making a royal mess, I finally managed to cobble together enough decent looking ones to create these three recipes. Whew!

A quick note: Ignore all of the salt requirements in these recipes and season according to taste. They were all too salty!
