I love eggnog and look forward to it every year. Last year I tried a 1944 recipe for Pineapple Eggnog and it blew me away! So, when I saw this recipe for Caramel Eggnog, unsurprisingly it went straight to the top of my list.
The caramel flavor is distinct but not overpowering - exactly what you want in a good caramel. I loved it! The foam on top is whipped egg whites that you fold into the nog, but it ends up rising to the top. (Not that I’m complaining!) Yes, this recipe uses raw eggs, so please keep that in mind.
The caramel base is the key to this recipe, obviously, so be patient and don’t let it get too dark or else it will be bitter. (Which happened on my first attempt.) You’re going for a light-medium amber color.
One last note is that vintage recipes for eggnog are usually much thinner and not as rich as their modern counterparts. It’s one reason why I love them so much. So refreshing!

I made homemade icecream with eggnog in place of cream and it was fabulous. Thanks for this recipe. I’ll look up that pineapple one as well.
