These festive cookies really surprised me. Taking a look at the dough, I had some serious doubts. How could that make cookies?
The recipe is pretty basic. Whipped egg whites with sugar added, then mixed up with cinnamon, candied fruits and a lot of slivered almonds—1 pound!
After baking, they puffed up, became nice and meringue-crispy and when you eat them they’re full of nutty goodness with small bursts of the candied fruit. I think this recipe is genius. The cinnamon doesn’t come through very strongly, so that amount can change depending on preference.
I used a 50/50 combo of candied citron and orange peel. I’m not a big fan of candied citron, so really, you could use whatever candied fruit you prefer. Pineapple or even ginger would be adventurous!
