Welcome to the start of my Wartime Christmas Peppermint Party! In this mini-series I’m featuring peppermint-themed, festive recipes from the American WWII era.
For the first recipe, Peppermint Custard was one of the four recipes that my paid subscribers settled on. When I put up the poll, I had not seen this recipe in one of my magazines to include it in the choices. Peppermint Custard is a cooked custard, which is notoriously tricky.
I want to share a nice variety of recipes as well as ones that are easy and simple, so I opted for this version of a peppermint custard that comes together in less than 10 minutes. I hope you don’t mind the swap! I don’t think you will, because this one was delicious and super easy.
For this recipe all you need is a box of chocolate pudding mix, milk, whipping cream, green dye (optional) and peppermint extract. Plus maraschino cherries if you like those. I used generic chocolate pudding mix I got at a discount Amish grocery store. It’s not as chocolatey as I’d like, but I’d say it’s closer to the vintage version of “chocolatey” which is much less than we’re used to anyway.
Follow the instructions on your pudding box and whip the cream. You might be tempted to sweeten the whipped cream. Don’t give into that temptation! Leave it unsweetened and add a few drops of the peppermint extract. I did 3 small drops which was perfect and not overpowering. Green dye is optional and I added just a tiny bit to color it an appropriate light mint green color.
Layer it up and top if off with a maraschino cherry dried off of its red juice to keep the color from bleeding. And there you go!
P.S. I did a double-take at the part of the instructions that say: “Cool. Whip…” They are not talking about Cool Whip! Haha!
This Chocolate Pudding Parfait tasted so delicious. The unsweetened, minty cream balanced out the chocolate pudding so the overall sweetness is very mild. It’s a great way to save on sugar, especially if it’s rationed! If you’re not a fan of really sweet desserts, this one would be a great option for you.
Leftover pudding or whipped cream were not wasted. I swirled them together in a single container and stuck it in the fridge to save for later. YUM.
